“Big Fella” - Shiraz

This wine is very dense in colour and shows a deep and inviting aroma of sweet spicy ripe fruit and subtle new oak. The palate is very substantial - a truly mouth filling wine with a very long flavour and good tannin structure which will ensure cellaring for many years.

Superb accompaniment to very flavoursome dishes such as Ox Tail, Osso Bucco, Char Grill Lamb Fillets, etc...

“Big Fella” - Old Vine Cabernet Sauvignon

Fruit from 45 year old vines at Koorlong in Victoria. These vines lack vigour and consistently crop at only 2.5 to 3 tons per acre with very small berries. In particular, the 2003 vintage had a very hot, dry ripening season in what is already considered to be a fairly hot location. This resulted in exceptional colour and concentration of fruit flavour as the berries contained little juice. The fermentation was carried out in small open top fermenters with hand plunging, a very challenging process due the huge ratio of skins to juice, followed by maturation for 14 months in French and American barriques, about 25% of which were new.

The resulting wine shows a very deep crimson colour, with an aroma of subtle oak and sweet berry fruits leading to a full bodied palate with good tannin structure and long finish.

This wine is well suited to a thick, juicy rare steak and will age very well in the cellar of a patient collector.

“Big Fella” - Merlot

The long cool ripening season suited this variety particularly well. The grapes which were grown over limestone were hand picked late in the season with high sugar level. Fermentation took place in a combination of open tops with hand plunging and small stainless steel vessels with frequent pump over.

The resulting wine is very full bodied with an exceptionally rich deep colour and wonderful depth of plum ripe fruit which was further enhanced by 14 months maturation in mainly French oak. This is a full bodied wine to enjoy now or later after resting in the cellar for a few years.

“Big Fella” - Petit Verdot

In Bordeaux, Petit Verdot is a late ripening grape variety so they only use this as blending variety. However, in Australia they grow so well and ripens which then enable us to produce a wine style on its own.

This wine shows the dense rich colour of ripe blood plums. An aroma of sweet ripe fruit and toasty new oak leads to a very full soft palate with rich, dark chocolate overtones leading to a soft lingering finish.

A genuinely “hand made” wine which will appeal greatly to the serious afficionado. Perfect to go with red meat dishes.

“Big Fella” - Cabernets (Preservative Free)

Preservative free wine should not taste this good!!

Glenn Olsen has reset the benchmark by producing a blend of SUPERB QUALITY wine at a moderate price, which is guaranteed to appeal to all customers even if they don't have an allergy to sulphur dioxide (sulfites).

“Big Fella” - Project Three Blend

Another fine example from the excellent 2002 vintage. This is a classic Bordeaux style blend (Merlot, Petit Verdot, Cabernet Sauvignon) but definitely the heavy weight version.

Handpicked fruit with partial open top fermentation and hand plunging. Superb deep colour - similar to blood plums, this wine has a very full flavoured palate with great depth of fruit and a lingering finish supported by fine tannins.

Will be a delightful pair to any Cheese platter and superb with Barbequed Spareribs and Beef Teriyaki.
