“The Big Momma” - Premium Dry Red
This superb blend shows a dense, rich colour with voluptuous spicy berry and plum fruits showing on the bouquet and palate. Full bodied style - almost “chewable”. The palate is particularly full-flavoured with a very long finish and is highly suited to accompany very flavoursome foods such as Peking Duck, Roast Pheasant with Cranberry sauce, BBQ marinated Pork Spare Ribs or simply to quaff with a gourmet cheese platter.

Yarra Valley - Riesling
This wine after four weeks of being bottled was the first runner up for the Best Riesling at the Cathay Pacific's Sommerliers' Wine Challenge 2004 held in Hong Kong and a Bronze medalist at the Victorian Wine Show 2004.
Pale Lemon with green tinge. Beautiful fresh clean lifted fruit on aroma - incredibly FRESH!
Palate is tightly knit - racey acidity, delicate, fine varietal character. Very clean finish with good persistence of flavour - goes down a treat with fresh Oysters!

Victoria - Premium Chardonnay
No holds barred! When we made this Chardonnay, we were prepared to go to any length necessary to make the best possible wine. Hand picked, whole-bunch pressed with reduced yield, barrel fermentation, extended lees contact and malolactic fermentation are our standard technique. Our chief wine maker Glenn, is so passionate with our wines that he will make the best possible wine regardless of the cost. However, do not despair as this Chardonnay is highly affordable. (As quoted) “If you enoy depth and complexity of fruit flavour in your Chardonnay, I am confident that this wine will not be surpassed without paying at least 50% more.
The resulting wine shows a fine aroma combined with barrel ferment complexity. The palate is delicate but long with a very clean finish.

Victoria - Premium Shiraz
The grapes were picked late in the season with a high sugar level approaching 13. 5 O to 14. 5 O Baume. Fermentation took place with careful temperature control to further enhance the fruit aromas and flavours.
The resulting wine shows a magnificent deep cherry red/garnet colour with lifted cherry and plum characters on the bouquet, together with toasty French oak. This leads to a very substantial palate although the tannins are soft, giving a mouth-filling but easily approachable style.
Food – very good with all kinds of char-grilled meat, robust casseroles such as Osso Bucco etc.

Personal Reserve - Barrel Aged Cabernet Sauvignon
The Yarra Valley has developed an enviable reputation for premium red wine, a reputation which can only be enhanced by this fine Cabernet Sauvignon from Dixon's Creek. Viticultural management was all important in growing the very high quality grapes needed and bunch thinning was carried out to keep the crop at less than 3 tons per acre. This low crop level combined with minimal watering, no application of fertilizer and a canopy which gave plenty of direct sunlight onto the bunches, allowed perfect development of flavour and colour, with hand picking taking place on 28th April 2003. After slow fermentation with careful temperature control, the still fermenting juices were transferred to French and American barriques and hogshead where the primary ferment and malolactic fermentation were completed. After 14 months barrel maturation, the wine was racked and bottled with minimal filtration.
The resulting wine has a very deep, vibrant colour with cassis and cherry fruits and subtle new oak showing on the aroma. The palate is full flavoured but with great finesse, with the tannins being fine and chalky. This truly hand made wine is for those who fully appreciate the finest Cabernet Sauvignon, and will benefit from several years cellaring.

Autumn Harvest - Sangiovese
Grown in Nichol's Point in Redcliffs, the grapes were left on the vines very late in the season to allow the effect of further concentrating the sugar and the flavour.
The resulting wine has a beautiful cherry colour. The palate shows abundance of fruit with crushed strawberries and black cherries with hint of subtle French oak. A wine which is best enjoyed well chilled with your favourite food.
Try it with char-grilled pork spare ribs marinated in red wine, soy sauce and plum sauce. Delicious!

Autumn Harvest - Muscat Blanc
“Pale gold with greenish tinge.” The aroma shows exotic, spicy tropical fruit - very fresh and clean. The palate shows great delicacy and the fruity flavours abound with just a touch of sweetness, with a lingering clean and crisp finish.
Will be highly enjoyed by those who appreciate very fruity characteristics and will go very well with a fruit and cheese platter or with spicy Asian dishes. In many ways similar to a very good Gewurztraminer.
